Fresh Fruit Chiffon Pie Recipe

Ingredients
1/4 cup sugar
1 tablespoon lemon juice
1 pint prepared fresh strawberries, sliced
1 envelope unflavored gelatine
1/4 cup cold water
1/4 teaspoon salt
Water to make 1/2 cup liquid
3 egg whites
1/2 cup light corn syrup
1 (9-inch) baked pastry shell
Directions
Sprinkle 2 tablespoons of the sugar and the lemon juice over strawberries; let stand 30 minutes.
Soften gelatine in 1/4 cup cold water.
Mix together the remaining sugar and salt in a saucepan.
Drain juice from strawberries and add water to make 1/2 cup liquid; add to sugar and stir over low heat, add softened gelatine and stir until dissolved.
Add strawberries.
Chill until the consistency of unbeaten egg white.
Caution: Do not let gelatine mixture become too stiff.
Beat egg whites until stiff, not dry.
Gradually beat in the corn syrup.
Fold in chilled gelatine mixture.
Chill until thick enough to pile up.
Pile lightly into baked pastry shell and swirl gently with a spatula.
