Fresh Corn Relish Recipe
Ingredients
| 9 cups fresh cut corn | ||
| Cabbage | 2 Cup (16 tbs) | |
| Onion | 1 1/2 Cup (16 tbs) | |
| 2 cups finely ground green peppers, seeded | ||
| Red pepper | 2 Teaspoon, crushed | |
| Celery seed | 2 Teaspoon | |
| Mustard seed | 1 Teaspoon | |
| Turmeric | 2 Teaspoon | |
| Salt | 2 1/2 Tablespoon | |
| Sugar | 1 Cup (16 tbs) | |
| Cider vinegar | 2 Cup (16 tbs) | |
| Pimento | 1/2 Cup (16 tbs), chopped | |
Directions
Bring to a boil the vegetables, spices, salt, sugar and vinegar.
Cook uncovered twenty minutes, or until relish has thickened.
Stir in pimento.
Ladle into hot sterilized jars at once.
Seal immediately.
Let stand six weeks before using.
