Fresh Berry Fool Recipe

Ingredients
1/2 lb fresh raspberries, strawberries or blackberries
6 tablespoons superfine sugar
grated rind of 1/2 orange
1 teaspoon lemon juice
2/3 cup heavy cream
DECORATION
whipped cream

Directions
Mix the berries to a puree with the sugar, orange rind and lemon juice .
Put the puree through a sieve to get rid of any seeds.
Whip the cream to soft peaks and put into the processor.
With the machine running, pour in the fruit puree through the feeder tube until the cream and fruit are just mixed.
Spoon into tall glasses and chill for 1 hour before serving.
Decorate with a whirl of whipped cream topped with a fresh berry.
