Fresh Bacon With Pea Starch Noodles Recipe

Ingredients

 
1/4 pound pea starch noodles
 
1 1/2 pounds fresh bacon
 
3 cups water
 
4 tablespoons soy sauce
 
2 tablespoons sherry
 
1 teaspoon salt
 
4 slices ginger
 
1 teaspoon sugar

Directions

Add the noodles to a large saucepan of boiling water and cook for 30 minutes.
Turn off heat and let soak for another hour.
Cut the meat into 1 1/2 inch cubes and put in another pan with 1 cup of water.
Bring to a boil, add the soy sauce, sherry, salt and ginger.
Lower the heat, cover, and simmer for an hour.
Drain the noodles and add to the meat.
When it comes to the boil again, slowly add the remaining 2 cups of boiling water and sugar and continue to simmer for another hour.
Serve very hot in a deep bowl.
