Fresh Tuna Salad Recipe
Ingredients
For the salad:
4 small red-skin potatoes, peeled and cut into eighths
6 ounces green beans, trimmed and cut into 1 1/2 inch lengths
2 tuna steaks (8 ounces each), about 1 inch thick
1 small yellow onion, finely chopped
12 yellow or red cherry tomatoes or 1 medium-size tomato, seeded and cubed
2 tablespoons snipped fresh dill
2 teaspoons capers, rinsed, drained, and chopped
For the dressing:
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon each salt and black pepper
1 tablespoon olive oil
Directions
1 In a large saucepan of boiling unsalted water, cook the potatoes for 1 minute over moderately high heat.
Add the green beans and cook 6 minutes more or until tender.
Set aside 3 tablespoons of the cooking liquid and drain the vegetables.
Rinse the vegetables under cold water to stop the cooking and drain again.
2 To prepare the dressing: In a small bowl, combine the vinegar, mustard, garlic, salt, and pepper.
Whisk in the reserved cooking liquid and then the oil or put all the dressing ingredients in a small jar, covertightly, and shake until well blended.
3 Meanwhile, preheat the broiler, setting the rack 6 inches from the heat.
Arrange the tuna steaks on a broilerpan, brush both sidesofeach steakwith someof the dressing, and broil for 4 to 5 minutes on each side or until the fish flakes easily when tested with a fork.
Transfer the tuna to a cutting board and allow to cool slightly.
4 In a large bowl, combine the potatoes, green beans, onion, tomatoes, dill, and capers.
Cut the tuna into 1 inch cubes and add it to the bowl.
Add the remaining dressing and gently toss to combine.
Add the green beans and cook 6 minutes more or until tender.
