Fresh Tomato Soup Recipe
This Fresh Tomato Soup recipe is good enough to surprise your family in a pleasant way. Best enjoyed as an Appetizer this recipe was taught to me by a dear friend who also happens to be a great chef. The Fresh Tomato Soup is made with Vegetable which is easy to procure from any grocery store. When it comes to cooking I am my worst critic. Ingredients
2 cups peeled, diced ripe tomatoes
3 tablespoons butter
2 tablespoons flour
1 teaspoon salt
Dash pepper
1/4 teaspoon soda
1 cup half-and-half (light cream)
1/2 cup dry white wine or regular-strength chicken broth
Directions
Simmer the tomatoes in butter for about 5 minutes; rub through a wire strainer or whirl smooth in a blender.
Sprinkle in flour, salt, and pepper, blending.
Bring to a boil; reduce heat and cook for 2 to 3 minutes, stirring constantly.
Add soda and half-and-half; cook until slightly thickened.
Stir in wine or chicken broth and heat to simmering.
