Fresh Tomato Sauces Recipe
Ingredients
1 1/2 to 2 cups (375 to 500 mL) ripe, unpeeled tomatoes, thickly sliced
1 tbsp (15 mL) butter or olive oil
1 tsp (5 mL) sugar
1/2 tsp (2 mL) basil or oregano or thyme

€¢ Place the tomatoes in a microwave-safe dish, microwave at HIGH 2 to 4 minutes, stirring after 2 minutes.
€¢ When ready, the tomatoes should have a nice, creamy texture, stir in the remaining ingredients until the mixture is light and smooth.
€¢ I learned how to make this sauce in the south of France, where they serve it over pasta, rice or to top poached or fried fish. I like it best served over small pasta.
€¢ In summer, when basil is at its best, place a few stems in a jar and set it on the table with a pair of scissors.
