Ingredients

 Tomato1
 Kosher salt1 To taste
 Pepper1 To taste
 Olive oil2 Tablespoon
 Wine vinegar2 Tablespoon
 Fresh basil (or other fresh herb) - 1 to 2 tablespoons, chopped
 Parsley1 Tablespoon, chopped

Directions

GETTING READY
1) Cut the tomato into thick slices.

MAKING
2) In the bottom of a small glass or porcelain serving dish or a soufflé dish, arrange a layer.
3) Lightly season the tomato slices with salt and pepper.
4) Pour in some of the oil and vinegar on top and sprinkle with basil and the parsley.
5) Repeat the layers with remaining tomatoes and spices. End with sprinkling the extra herbs on top.
6) Cover and place aside to marinate at room temperature for at least an hour before serving.

SERVING
7) Serve the tomatoes by spreading the marinating juices over the slices.
