Fresh Tomato And Basil Sauce Recipe
Ingredients
5 tablespoons (2 1/2 ounces) butter
3 tablespoons olive oil
1/2 cup finely chopped onion
3 tablespoons red wine vinegar
3 1/2 pounds firm ripe tomatoes, peeled, seeded and coarsely chopped
1/3 cup packed slivered fresh basil leaves or 4 teaspoons dried
3/4 teaspoon salt
1/2 teaspoon pepper Grated Parmesan cheese
Directions
Heat the butter and oil in a large skillet.
Add the onion and cook over medium-low heat for about 5 minutes until just softened.
Add the vinegar and cook over moderate heat for 2 minutes.
Add the tomatoes and cook gently over medium-low heat for about 15 minutes until about half of the tomato liquid is evaporated and the sauce is somewhat thickened.Add the basil, salt and pepper and cook gently for 2 minutes more.
