Fresh Shrimp Risotto Recipe
Ingredients
| Onion | 1 Tablespoon, finley chopped | |

| 3/4 lb. fresh small shrimp, cleaned and deveined | ||
| 2-1/2 cups chicken or clam broth | ||
| 3 cups Brand Rice | ||
| Salt | 1 Teaspoon | |
| Saffron | 1/4 Teaspoon | |
| Ground pepper | 1/4 Teaspoon | |
Directions
In a medium skillet, cook onion in butter until golden.
Add shrimp.
Cook over medium heat until shrimp have golden color, about 4 to 5 minutes.
Stir in remaining ingredients and bring to a vigorous boil.
Cover and simmer until all liquid is absorbed, about 5 minutes.
