Fresh Pineapple Nut Bread Recipe
Ingredients
1 3/4. cups sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. soda
3/4 cup coarsely chopped
Hawaiian macadamia nuts
3/4 cup brown sugar, firmly packed
3 tbs. soft butter or margarine
2 eggs
1 cup finely chopped fresh pineapple (packed firmly so cup is filled with juice and pineapple bits)
Topping:
2 tbs. sugar
1/2 tsp. cinnamon
Directions
Sift together first four ingredients.
Add nuts to dry ingredients.
Cream together sugar, butter and eggs until fluffy.
Stir in half the flour mixture.
Add pineapple.
Blend in remaining flour mixture and pour into well greased 9 x 5 x 3-inch pan.
Combine topping ingredients and sprinkle over top of bread mixture.
Bake in 350°F.oven for about 1 hour.
