Fresh Pineapple Chutney Recipe
Ingredients
1 medium pineapple
1 1/2 cups white vinegar
1 1/2 cups brown sugar
1 15-oz. pkg. raisins
1 tbs. salt
2 tbs. finely chopped ginger root
2 tbs. finely chopped garlic
3 Hawaiian red peppers, seeded and finely chopped (small red hot chilies)
1 cup chopped Hawaiian macadamia nuts (or almonds)
Directions
Peel and core pineapple, cut into small pieces.
Combine with all other ingredients except nuts.
Cook slowly until pineapple is tender (about 30 mins.).
Add nuts and cook until chutney is of desired consistency.
Stir frequently to prevent scorching.
Pour into sterilized jars and seal.
