Fresh Peas French Style Recipe
Ingredients
| Peas | 2 Cup (16 tbs), pounded | |
| 6 tiny white onions, peeled | ||
| Lettuce leaves | 6 , shredded | |
| 3 sprigs parsley, tied together | ||
| Salt | 1/2 Teaspoon | |
| Pinch of sugar | ||
| Butter | 3 Tablespoon | |
| Water | 1/4 Cup (16 tbs) | |
| Flour | 1 Teaspoon | |
Directions
1. In a saucepan combine the peas, onions, lettuce, parsley, salt, sugar and two tablespoons of the butter. Mix together and add the water.
2. Cover closely and cook over medium heat until all but a little of the moisture evaporates, about thirty minutes.
3. Cream together the remaining butter and the flour. Add to the liquid in the pan and shake the pan in a circular movement to mix it in (stirring with a utensil breaks the peas). When the liquid has thickened and returned to a boil, remove the pan from the heat. Remove the parsley and serve.
