Fresh Pear Cake With Blue Cheese Recipe

| Medium | 2 Cup (16 tbs), thinly sliced | |
| All purpose flour | 1/4 Cup (16 tbs) | |

Directions
Preheat oven to 350°.
Combine 2/3 cup sugar, 1/2 cup blue cheese, and margarine in a bowl; beat at high speed of an electric mixer until smooth.
Add milk, egg whites, and vanilla; beat well.
Combine 1 1/3 cups flour and baking powder.
Add to cheese mixture, stirring just until moistened.
Spread batter into a 9-inch square baking pan coated with cooking spray.
Arrange pear slices in a single layer in 3 rows on top of batter, pressing pear slices gently into batter.
Combine 1/4 cup flour and 3 tablespoons sugar in a bowl; cut in remaining cheese with a pastry blender or 2 knives until mixture resembles coarse meal.
Sprinkle over pears.
Bake at 350° for 45 minutes or until browned.
