Fresh Pear Bread Recipe
Ingredients
2 cups whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
3/4 cup pear nectar
1 1/3 cups finely chopped fresh pear (about 1 1/2 medium)
1/4 cup currants or dark raisins
Directions
1. In a large bowl, combine the flour, sugar, baking soda, baking powder, nutmeg, and cinnamon, and stir to mix well. Add the pear nectar and chopped pear, and stir just until the dry ingredients are moistened. Fold in the currants or raisins.
2. Coat an 8-x-4-inch loaf pan with cooking spray. Spread the batter in the pan, and bake at cc for 45 minutes, or until a wooden toothpick inserted in the center comes out clean.
3. Remove the bread from the oven, and let sit for 10 minutes. Invert the loaf onto a wire rack, turn right side up, and cool to room temperature before slicing.

Batter wasn't wet enough??? ended up adding an egg and some oil to make it mixable, also added 1/2tsp salt since I don't remember ever making a muffin or loaf recipe with baking soda and powder and not needing salt. Wondering if some ingredients were left off, not to mention I cooked it at 375°, not sure what cc stands for?
