Ingredients

 Water1 1/2 Cup (16 tbs)
 Quick-cooking tapioca1/4 Cup (16 tbs)
 Sugar5/8 Cup (16 tbs)
 Salt1/4 Teaspoon
 1 1/2 cups diced, peeled juicy ripe peaches
 Lemon juice2 Tablespoon
 Almond extract1/8 Teaspoon
 Coffee or whipping cream

Directions

Heat water to boiling in top of double boiler over direct heat.
Mix tapioca, sugar and salt and slowly add to water, stirring vigorously.
Continue to stir constantly over direct heat until mixture comes to a full boil; then place over boiling water and cook 5 minutes with occasional stirring.
Add peaches and lemon juice, cover and cook 5 minutes longer.
Remove from heat, add almond extract and cool.
