Fresh Pea Soup Recipe

Ingredients
1 tsp vegetable oil
1 cup onion, chopped
1 cup carrots, shredded
4 cup iceberg lettuce, shredded
4 cup fresh peas, shelled
8 cup chicken broth
1 tsp salt
1/2 tsp black pepper
Directions
In a large soup pot or Dutch oven, heat oil over medium heat.
Stir in the onion and carrots.
Cover and cook 5 minutes or until onion is translucent but not brown.
Add remaining ingredients and bring to a boil.
Cover, reduce heat and simmer 10 to 15 minutes, stirring occasionally, until peas are tender.
Remove from heat.
Pour 2 c. (500 mL) of the soup into blender container.
Cover and blend on low until mixture is pureed.
Stir into the soup in the pot.
Stir in the onion and carrots.
