Fresh Nectarine Mousse With Strawberries Recipe
Ingredients
1/2 cup cold water
2 envelopes unflavored gelatin
1/2 cup milk
5 to 6 ripe nectarines
1/3 cup honey
2 egg whites
1 cup heavy cream
1 cup thickly sliced fresh strawberries unhulled whole fresh strawberries
Directions
Pour water into a small bowl, and sprinkle gelatin on top.
Let stand for a few minutes to soften.
Warm milk in top of a double boiler set over hot water.
Add gelatin to milk, and stir over hot water until completely dissolved.
Peel nectarines, and slice them into a 2-cup measure, packing tightly, until it is filled.
Chop nectarine slices in a food processor or blender.
Add honey.
Blend but do not puree.
There should be small pieces of fruit in the mixture.
Place chopped nectarines into a large bowl, and stir in gelatin.
Beat egg whites in a small bowl until stiff but not dry.
Fold into fruit.
In a medium-size bowl, whip cream until soft peaks form.
Fold into fruit.
Pour into an oiled 2-quart mold.
Fold in sliced strawberries, and chill until firm.
