Fresh Mint Cookies Recipe
Ingredients
| Butter/Margarine | 1 1/2 Cup (16 tbs), softened | |
| Sugar - 2/3 cup superfine, granulated | ||
| Egg | 1 | |
| Mint leaves | 2 Tablespoon, minced | |
| Orange zest | 1 Tablespoon, grated | |
| Vanilla extract | 1/2 Teaspoon | |
| All-purpose flour - 2 cups | ||
| Granulated sugar | ||
Directions
GETTING READY
1. Preheat oven to 350 degrees.
MAKING
2. In a large bowl, cream butter and superfine sugar until fluffy.
3. Beat adding egg, mint leaves, orange zest and vanilla until smooth.
4. Add flour to creamed mixture and stir until a soft dough forms.
5. Cover dough and chill overnight.
6. Shape dough into 1-inch balls and on an ungreased baking sheet place them 1 inch apart.
7. Flatten balls with bottom of a glass dipped in granulated sugar and bake 7 to 9 minutes or until edges are lightly browned.
8. Transfer cookies to a wire rack to cool.
9. Store in an airtight container.

10. Serve as snack alongside beverages or as desired.
