Fresh Mexican Salsa Recipe

Ingredients
1 fresh or canned serrano or jalapeno chili
1 large tomato, seeded, finely chopped
2 green onions, chopped
1/2 garlic clove, minced
2 teaspoons olive oil
1 to 2 teaspoons finely chopped cilantro
1/2 to 1 teaspoon lime juice
Salt
Freshly ground pepper
Directions
To handle fresh chili, cover your hands with rubber or plastic gloves; after handling, do not touch your face or eyes.
Cut chili open lengthwise; remove seeds and pith from fresh or canned chili.
Finely chop chili.
In a small bowl, combine chopped chili, tomato, green onions, garlic, oil, cilantro and lime juice.
Season with salt and pepper to taste.
Taste and add more chilies, cilantro, lime juice, salt or pepper as needed.
