 Salt pork3 Ounce, diced
 Salt2 1/2 Teaspoon
 Water4 Cup (16 tbs)
 4 cups shelled peas
  black pepper1

Directions

Place the salt pork, salt, and water in a large heavy saucepan over high heat.
Bring to a boil, lower the heat, and simmer for 15 minutes.
Add the peas and simmer for 1 hour, or until tender.
Add water if needed to keep the peas barely covered with liquid at all times.
Adjust the seasonings with salt and pepper.
Serve with hot cornbread. Sprinkle with pepper sauce, if desired.
