Ingredients
4 egg yolks
1/3 to 1/2 cup honey
2 tablespoons finely grated fresh lime peel
1/2 cup fresh lime juice
4 egg whites
1 cup heavy cream, whipped
1/4 cup chopped nuts (pistachios, cashews, or walnuts)
Directions
Put the egg yolks, honey, lime peel, and juice into the top of a double boiler.
Mix well, then place over simmering water and cook 10 to 15 minutes, or until mixture is thick and smooth.
Stir occasionally during cooking.
Remove boiler from hot water and cool, then place in refrigerator for about 30 minutes.
In a large bowl, beat egg whites until stiff.
Stir about one-quarter of the egg white into the chilled lime mixture.
Then gently fold the lime mixture into the remaining egg white.
Fold cream into the mousse.
Pour into a large serving bowl or into 6 individual sherbet or small parfait glasses.
Cover and refrigerate several hours or overnight.
When ready to serve top with chopped nuts.
