Fresh Lime Mousse Recipe

Ingredients
4 eggs
4 oz caster sugar
2 large limes
1/2 oz gelatine
3 tablespoons cold water
Whipped cream and lime slices to decorate
Directions
Separate the eggs and place the yolks in a bowl with the sugar; beat well until blended and creamy.
Put the whites in a bowl ready for whisking.
Grate the rind and squeeze the juice from the limes and add both to the yolk mixture.
Place the gelatine and water in a small bowl or cup.
Stand for 3 minutes until it becomes a sponge, then stand the bowl in a pan of simmering water and allow the gelatine to dissolve.
Cool slightly and add to the yolk and lime mixture.
Leave to cool but not set.
Whisk the egg whites, using a rotary or electric whisk, until stiff, then fold into the lime mixture.
Put into a 2 pint (a good litre) glass dish and chill for at least 4 hours to set.
Decorate with whipped cream and lime slices and serve at room temperature.
