Fresh Herb Salad Recipe
Ingredients
| 1 cup each lightly packed fresh basil leaves and fresh mint leaves | ||
| 1/4 cup Italian parsley leaves | ||
| Oregano leaves | 1/4 Cup (16 tbs) | |
| 2 cups lightly packed arugula or watercress sprigs, rinsed and crisped | ||
| 2 cups bite-size pieces butter lettuce, rinsed and crisped | ||
| Lemon | 1 Large | |
| Extra virgin olive oil | 1/4 Cup (16 tbs) | |
| Ground pepper | 1 To taste | |
| Salt | To Taste | |
Directions
In a salad bowl, gently mix basil, mint, parsley, oregano (if used), arugula, and lettuce.
Cut lemon in half and squeeze juice into a small bowl.
Whisk in oil.
Pour dressing over salad; season to taste with salt and pepper.
