Ingredients

 1 cup each lightly packed fresh basil leaves and fresh mint leaves
 1/4 cup Italian parsley leaves
 Oregano leaves1/4 Cup (16 tbs)
 2 cups lightly packed arugula or watercress sprigs, rinsed and crisped
 2 cups bite-size pieces butter lettuce, rinsed and crisped
 Lemon1 Large
 Extra virgin olive oil1/4 Cup (16 tbs)
 Ground pepper1 To taste
 Salt To Taste

Directions

In a salad bowl, gently mix basil, mint, parsley, oregano (if used), arugula, and lettuce.
Cut lemon in half and squeeze juice into a small bowl.
Whisk in oil.
Pour dressing over salad; season to taste with salt and pepper.
