Fresh Fruits On A Skewer With Raspberry Mousse Recipe
Ingredients
| 2/3 cup, packed, fresh or frozen unsweetened raspberries, thawed | ||
| 1/2 recipe Spa Cream | ||
| 8 (1 -inch) cubes fresh pineapple | ||
| 1 kiwi fruit, peeled and cut into 8 pieces | ||
| 8 navel orange segments | ||
| 8 strawberries, hulled | ||
Directions
Puree the raspberries in a blender or food processor, then pass through a fine sieve to strain out the seeds.
You will have about 1/2 cup puree.
Taste for sweetness.
Set aside.
Make the Spa Cream and fold it into the raspberry puree.
Divide the mousse among 4 chilled dessert plates.
Thread 4 bamboo skewers with 2 pieces each of pineapple, kiwi, orange, and strawberry.
Place a skewer of fruit on each plate, and serve at once.
