Fresh Fruit Pizza Pie Recipe
Ingredients
Favorite sugar cookie recipe or 2 pkgs. sugar cookie dough
16 oz. cream cheese
1 c. powdered sugar
1 1/2 tsp. vanilla extract
Glaze:
1/2 c. sugar
1 T. tapioca
1 c. orange juice
1 (8-oz.) ctn.
Cool
Whip Fresh fruits (your choice -peaches, strawberries, kiwi, bananas, apples, any berries)
1/4 c. lemon juice
1/4 tsp. grated lemon peel
Directions
Crust: Divide dough in half.
Pat or roll dough into greased 2 pizza-type pans.
Bake at 350° for 12-15 minutes or until golden brown.
Cool.
Filling: Whip cream cheese, powdered sugar and vanilla together.
Mix in Cool Whip.
Spread over cooled crust.
Decorate with slices of fruit.
Arrange fruit so it completely covers the crust.
Glaze: Combine tapioca, juices and sugar in saucepan.
Allow to soften for 10 minutes.
Cook until thick over medium heat.
Cool and glaze pizza pie with sauce.
Cut into wedges and serve.
