Fresh Fig Pie Recipe
Ingredients
pastry for 1 Basic Flaky Piecrust
8 fresh figs
3 eggs
1 cup honey
1/4 cup butter, melted and cooled
1 tablespoon molasses
1 tablespoon flour
Directions
Preheat oven to 450°F.
Roll out pastry, and line a 9-inch pie plate with it.
Trim excess, and press rim with the tines of a fork.
Remove stems of figs, but don't peel them.
Dice figs. (You should have 2 cups.) Spoon into pastry-lined pie plate.
Combine remaining ingredients in blender container, and process to blend completely (or beat by hand with a whisk).
Pour mixture over figs.
Place pie on middle shelf of oven, and reduce heat to 350°F.
Bake for 1 hour, or until a knife inserted near the center comes out clean.
During the last 20 minutes of baking, if the pie has browned, lay a sheet of aluminum foil loosely over the top to prevent overbrowning.
