Fresh Corn Salad With Minced Celery Recipe
Ingredients
| Corn Kernels- 3 cups (about 6 to 7 ears), cooked | ||
| Celery | 1 1/2 Cup (16 tbs), thinly sliced | |
| Red or green bell pepper- 1 | ||
| Green onion | 3 , thinly sliced | |
| Sweet pickle- 2 tablespoons, minced | ||
| Mayonnaise | 1/3 Cup (16 tbs) | |
| Sour cream | 1/4 Cup (16 tbs) | |
| Vinegar | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Worcestershire | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Dijon-style mustard- ½ teaspoon, prepared | ||
| Basil leaves- ¼ teaspoon, crumbled | ||
Directions
MAKING
1. In a mixing bowl combine pickle, chopped onions, bell pepper, corn and celery.
2. Cover the bowl and let it chill.
3. In another small bowl mix sour cream, mustard, basil, Worcestershire, mayonnaise, vinegar, pepper and salt.
4. Cover the bowl and chill.
FINALIZING
5. Add vegetables and combine with the dressing.
6. Mix slowly.
SERVING
7. Serve fresh corn salad on lettuce leaves, garnished with bell pepper cut into small rings.
