Ingredients

 Pancake mix5 Tablespoon
 Salt1/4 Teaspoon
 Pepper1/8 Teaspoon
 Parmesan Cheese- ½ cup, shredded
 Eggs2 Small, slightly beaten
 Corn kernels2 Cup (16 tbs), uncooked
 Pimiento2 Tablespoon, chopped
 Green onion1 Tablespoon, chopped
 Canned California green chili- 1 to 2 tablespoons, chopped
 Butter/Margarine2 Tablespoon

Directions

GETTING READY
1. In a bowl combine salt, cheese, pepper and pancake mix.
2. Blend pimiento, chilies, corn, eggs and corn well.

MAKING
3. In a griddle or frying pan add butter and heat.
4. Use a spoon to drop the vegetable mixture in the pan. ( 2tblsp for 1 fritter)
5. Flatten the mixture with the back of spoon.
6. Cook for 3 minutes in medium heat or till the mixture turns light brown in color.

FINALIZING
7. Turn the ingredients and cook for 3 minutes more.

SERVING
8. Serve fresh corn fritters immediately.
