Ingredients
3 medium-sized cooking apples , peeled, cored, and cut into bite-sized chunks
1/4 cup water
3 tablespoons sugar
1/2 teaspoon almond extract
5 egg whites, at room temperature
Confectioners' sugar
Directions
1. In 2-quart saucepan over high heat, heat apples and water to boiling. Reduce heat to low; cover and simmer 8 to 10 minutes, stirring occasionally, until apples are tender. Stir in sugar and almond extract. Remove saucepan from heat; cool apple mixture in saucepan in refrigerator 10 minutes.
2. Meanwhile, preheat oven to 450°F. In large bowl, with mixer at high speed, beat egg whites until stiff peaks form. With rubber spatula, gently fold cooled apple mixture into beaten egg whites. Spoon mixture into 1 1/2-quart souffle dish. Bake 15 minutes or until souffle puffs and is browned.
3. Lightly sprinkle souffle with confectioners' sugar and serve immediately.
