Stir in raisins, candied fruit, nuts, and dates.
Mix apples with soda until thoroughly combined; stir into fruit-nut mixture.
In a separate bowl, stir together flour, salt, cinnamon, and nutmeg until well blended; then add to fruit mixture, stirring to blend thoroughly.
Turn into a greased and flour-dusted 9 by 5-inch loaf pan.
Bake in a 350° oven for 1 hour and 25 minutes, until bread begins to pull away from sides of pan and a wooden skewer inserted in center comes out clean.
Let cool in pan for about 3 minutes; then turn out onto a rack to cool completely.
Wrap and refrigerate for 1 day before slicing.
