French Potato Pancakes Recipe
Ingredients
| 2 Ige. potatoes | ||
| Onion | 1 Medium | |
| Flour | 2 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1 | |
| Nutmeg | ||
| Parsley | 1/2 Teaspoon, chopped | |
| Eggs | 2 , separated | |
| Butter | ||
Directions
Peel and grate potatoes and onion.
Combine pota- toes, onion and flour with seasonings and parsley; blend well.
Beat egg yolks slightly; stir into potato mixture.
Beat egg whites until stiff peaks form; fold into potato mixture.
Drop by tablespoonfuls onto greased hot griddle; cook on both sides until lightly browned.
