Frozen whole strawberries-1 package (1 pound), thawed, but not drained
 
Brandy-2 tablespoons
 
All-purpose flour-1 cup, sifted
 
Baking soda-1/2 teaspoon
 
Salt-1/4 teaspoon
 
Sugar-2 tablespoons
 
Egg-1, beaten
 
Milk-1 cup
 
Vinegar-2 tablespoons
 
Butter or margarine-1/3 cup, melted
 
Combine: Cream cheese-1 package (8 ounces), softened
 
Lemon juice-2 tablespoons
 
Sugar-1/4cup
 
Almond extract-1/4 teaspoon

Directions

MAKING
1)In a bowl, add strawberries and brandy, leave it for 30 minutes to mellow.
2)In another bowl, sift together flour, baking soda, salt and 2 tablespoons sugar.
3)Take a small bowl and beat egg, milk and vinegar.
4)Add it into flour mixture until smooth.
5)Take a 5 1/2 inch skillet and heat 1 teaspoon butter in it.
6)Add enough batter to cover bottom of pan and brown on both sides.
7)Spread cream cheese mixture on pancakes and roll up.
8)Brush pancake rolls with remaining melted butter.
9)Cover and heat to serving temperature.

SERVING
10)Serve French pancakes with brandied strawberries.
