1/4 cup butter or margarine
 
2 cups sliced onions
 
4 to 5 cups bouillon (use 2 10 1/2-ounce cans beef bouillon, diluted, or make with beef soup base
 
and water) Salt and pepper Worcestershire sauce French bread (the heavy kind is best)
 
1 cup grated cheese (Gruyere, Swiss, or Parmesan)

Directions

Heat butter in a large, heavy saucepan; add onions. Stir and simmer on medium heat until onions are soft and richly browned (takes about 45 minutes). Add bouillon. Season to taste with salt, pepper, and Worcestershire sauce. Pour the hot soup into earthenware bowls or soup plates. Float a slice of toasted French bread on top, and sprinkle with grated cheese. If desired, put soup bowls on a shallow baking pan and place under the broiler until cheese melts a bit. Or sprinkle cheese on toast and broil on cookie sheet until cheese is golden before placing on soup.
