Ingredients

 
2 ½ large onions
 
4 tbsp butter + 2 tbsp olive oil
 
1 tsp dried thyme
 
2 bay leaves
 
5 tbsp sherry
 
2 cups beef stock
 
3 cups chicken stock
 
Salt
 
Pepper
 
Toasted bread rounds
 
1 cup grated gryene
 
¼ cup finely grated parmesan
 
For dressing:
 
1 tbsp fresh lemon juice
 
1 tbsp Tarragon juice
 
3-4 tbsp good extra virgin olive oil
 
Salt
 
Pepper

Directions

Take a pan and place on medium heat. Add to it butter and olive oil. When the butter melts, add the onions. Saute. Season lightly with salt and sauté for 20-30 minutes on medium low heat. Add the sherry. Add salt, pepper, chicken stock, beef stock, dried thyme and the bay leaves. Serve in a bowl with croutons. Cover with grated parmesan and gryere. Place under broiler till the cheese melts.
Combine all ingredients for the dressing. Pour over the lettuce leaves. Toss and serve a complete meal.
