French Meat Loaf Recipe
Ingredients
2 beaten eggs
1 cup finely chopped onion
3/4 cup cottage cheese
1/2 cup shredded cheddar cheese (2 ounces)
1/2 cup fine dry bread crumbs
1/2 cup chopped green pepper
1/3 cup tomato sauce
1/4 cup dry red wine
1 teaspoon Dijon-style mustard
3/4 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground beef
1/2 pound lean ground pork
1/2 pound ground veal
8 small cornichons or sweet pickles
3 tablespoons Dijon-style mustard
Directions
In a large mixing bowl combine eggs, onion, cottage cheese, cheddar cheese, bread crumbs, green pepper, tomato sauce, wine, 1 teaspoon mustard, salt, and pepper.
Add ground meats; mix well.
Pat mixture evenly in a metal 9x5x3-inch loaf pan.
Place meat loaf in pan in center of the cooking grill.
Grill 50 to 60 minutes or till meat thermometer inserted near center of loaf registers 170°F (77°C) and no pink remains.
Drain meat loaf.
Let stand 15 minutes.
Drain again, if necessary, and invert onto a serving plate.
Serve with cornichons and the 3 tablespoons mustard
