French-Fried Eggplant Recipe
Ingredients
| Eggplant | 7 Medium | |
| Salt | 1 Tablespoon | |
| Egg | 1 , beaten | |
| Cornmeal | 1 Cup (16 tbs) (for rolling) | |
| Oil | 1 (as required) |
Directions
Peel eggplant; cut into 1/2-inch strips.
Place eggplant strips in salted water to cover; soak for 30 minutes.
Drain well.
Dip strips into egg; roll in cornmeal.
Fry in deep hot oil in skillet until lightly browned; drain on paper toweling.
Serve immediately.
