Ingredients

 
Corn Flakes – 2 cups or Corn Flake Crumbs – ¼ cup
 
Confectioner’s Sugar - 3 tablespoons
 
Sifted flour - 1/4 cup
 
Butter or Margarine - 1/4 cup
 
Sifted flour - 1/4 cup
 
Baking Powder – ½ teaspoon
 
Salt – ¼ teaspoon
 
Eggs – 2, well beaten
 
Maraschino Cherries – ½ cup, halved and drained
 
Sugar - 1 cup
 
Vanilla Flavoring – 1 teaspoon
 
Nutmeats – ½ cup, chopped
 
Coconut – ½ cup, flaked

Directions

GETTING READY
1)Crush the cornflakes into fine crumbs

MAKING
2)In a mixing bowl mix together the confectioner’s sugar, flour and the corn flakes crumbs
3)Using the hands, mix in the butter to resemble a coarse mixture
4) In a 8 x 8 inch baking pan, spread the crumbs evenly
5)Bake in the oven at 350 F for 25minutes till lightly browned
6)Sift the flour, baking powder, salt in a large bowl
7)Using the electric mixer, cream the eggs, sugar and the vanilla
8)Add in the flour mixture
9)Fold in the nutmeats, coconut and the cherries
10)Spread over the baked crust
11)Bake in the oven at 325 F for 45minutes till done
12)Allow to cool

SERVING
13)Cut into squares and serve topped with whipped cream or ice cream
