Ingredients

 
2 large onions, finely sliced
 
2 slices of bacon, chopped
 
1 tablespoon butter
 
4-6 ripe tomatoes (or 1 cup canned tomatoes), chopped
 
1 tablespoon tomato puree
 
2-3 strips of lemon rind
 
4 cups Chicken Stock
 
1 teaspoon sugar
 
1 tablespoon parsley
 
1/4 teaspoon thyme
 
1 teaspoon basil
 
Garnish:
 
1 tablespoon chopped mixed parsley and basil
 
Fried garlic croutons (see end of soup section)

Directions

1. Heat the bacon pieces in a pan. When the fat has run, add the butter. When it has melted, add the onions and cook gently for 5-6 minutes until tender and golden brown. Add the tomatoes and tomato puree, lemon rind, stock, salt, pepper, sugar, and herbs. Bring to a boil. Then simmer for 20 minutes or until tomatoes are tender.
2. Put soup through a food mill or blend in electric blender. Adjust seasoning and serve hot, sprinkled with chopped parsley and basil and with fried garlic croutons.
