| 1 large tart apple or firm pear, thinly sliced | ||
| Maple syrup | 2 Tablespoon | |
| 1 nectarine or peach, thinly sliced | ||
| Strawberries | 1/2 Cup (16 tbs), halved | |
| 1/4 cup red raspberries | ||
| Orange rind | 1/2 Teaspoon, grated | |
Directions
To make the French toast: In a shallow bowl large enough to hold the bread in a single layer, beat together the egg, egg white, milk, vanilla, cinnamon, and nutmeg until well mixed.
Add the bread and turn to coat both sides.
Let soak while you prepare the sauce.
To make the fruit sauce: In a medium bowl, combine the apples or pears and maple syrup.
Microwave on high for 1 minute.
Stir in the nectarines or peaches, strawberries, raspberries, and orange rind.
Microwave on high for 1 minute.
To serve: Heat a large frying pan over medium heat.
Lightly coat with no-stick spray.
Add the bread in a single layer and reduce the heat to medium-low.
Cook until the bottom is browned, about 3 or 4 minutes.
Flip the pieces and cook for a few more minutes to brown.
Serve the French toast topped with the sauce.
