French Style Onion Soup Recipe
Ingredients
4 large onions
2 teaspoons olive oil
1 tablespoon whole wheat flour
1 clove garlic
5 cups Chicken Stock
1 tablespoon tamari or soy sauce
1/2 cup shredded Gruyere or Swiss cheese
Directions
Cut the onions in half lengthwise, then slice crosswise into thin half-circles.
Heat the oil over low heat in a very large skillet or large flameproof casserole.
Add the onions, cover, and cook slowly, stirring occasionally.
Add a few drops of water if necessary to prevent the onions from scorching.
When the onions are tender and begin to turn golden brown, sprinkle the flour on them.
Add the garlic by pushing it through a garlic press into the pan.
Stir until the onions are coated with flour.
Cook, stirring, 2 to 3 minutes.
Add the stock and tamari, cover, and cook over low heat for about 15 minutes.
