French Potato Chicken Salad Recipe

Ingredients

 
1 pound boiling potatoes, unpeeled
 
1/2 pound fresh green beans or 1 package (10 ounces) frozen green beans, thawed
 
2 skinless, boneless chicken breast halves
 
1/4 cup olive or other vegetable oil
 
2 tablespoons white wine vinegar or cider vinegar
 
1 tablespoon Dijon mustard
 
3/4 teaspoon Worcestershire sauce
 
2 tablespoons minced fresh dill or 2 teaspoons dried
 
3/4 teaspoon salt
 
Pinch of pepper

Directions

1 Cut the potatoes into 1/2-inch chunks. Steam the potatoes in a steamer for 10 minutes.
2 Meanwhile, cut the beans into 2-inch lengths. Add the beans to the steamer, cover and cook until the potatoes are just tender and the beans are crisp-tender, 5 to 8 minutes longer.
3 Meanwhile, cut the chicken into bite-size pieces. Remove the vegetables from the steamer and set aside. Place the chicken in the steamer, cover and cook until opaque throughout, about 6 minutes.
4 In a small bowl, combine the oil, vinegar, mustard, Worcestershire sauce, dill salt and pepper.
5 Place the potatoes, green beans and chicken in a serving bowl, add the dressing and toss to combine well.
