 Bacon slice1 , diced
 Green onions2 , chopped
 Garlic1/2 Clove (5gm), crushed
 1/2 cup cold cooked unpeeled new potatoes
 Basic Omelet
 Fresh-grated Parmesan or Romano cheese for garnish
 Salt To Taste
 Pepper To Taste

Directions

Saute the bacon in a small frying pan€”not your omelet pan.
When the bacon is crisp, add the green onions, garlic, and potatoes.
Cook until hot, and use for filling in the omlelet.
Add salt and pepper last.
Garnish with cheese on top.
