| 1 1/2 gills milk | ||
| Butter | 2 Ounce | |
| Lemon rind | ||
| Sugar | 2 Ounce | |

Directions
Thoroughly grease 12 flat round tins (or saucers).
Cream the butter and sugar, beat in the yolks of the eggs with a little flour.
Add the remainder of the flour with the milk and lemon juice.
Fold in the whites of the eggs, stiffly beaten, and pour into the tins.
Bake in a hot oven (450°F.€”Gas Mark 7) until well risen, brown and firm€”about 10 minutes.
Turn on to a sugared paper, put a little hot jam on each and sandwich 2 rounds together.
Pile neatly on a hot dish and dust with castor sugar.
