Microwave French Onion Soup Recipe

Ingredients
2 tablespoons butter or margarine
3 medium onions, peeled and sliced
1/3 cup sliced celery
4 cups beef broth (homemade, canned or from bouillon cubes)
4 to 6 French bread slices, toasted
Grated Parmesan or Romano cheese
Directions
1. Put butter, onion and celery into a 3-quart glass casserole. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 7 to 8 minutes at High, or until vegetables are tender; stir once.
2. Add broth to onion mixture. Heat covered in microwave oven to serving temperature (6 to 8 minutes at High, or if using Temperature Probe, set at 160°F and at High).
3. Ladle soup into bowls and add toasted bread slices. Sprinkle with cheese.
