Onion Soup – French Style Recipe
Ingredients
| Butter | 50 Gram | |
| Onions | 500 Gram, sliced | |
| Plain flour | 25 Gram | |
| Vegetable stock | 1.2 Liter | |
| Cognac | 1 Tablespoon | |
| Dijon Mustard | 1/2 Teaspoon | |
| French bread slice | 6 (To garnish) | |
| Gruyere cheese | 75 Gram, grated (To garnish) | |
| Finely chopped parsley | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Melt the butter in a large saucepan, add the onions and cook over a moderate heat, stirring constantly, until soft and pale gold in colour. Sprinkle in the flour and stir for about 1 minute, then gradually pour in the stock. Bring the mixture to the boil, stirring constantly, and add salt and pepper to taste.
2. Lower the heat and simmer for 20-25 minutes. Stir in the Cognac, if using, and the mustard. Keep the soup hot.
3. Grill the bread for the garnish until it is lightly browned, then sprinkle each slice with the grated Gruyere. Pour the soup into heatproof bowls and float a slice of cheese-topped bread in each bowl. Put the bowls under a preheated grill until the cheese melts and bubbles. Sprinkle with chopped parsley and serve the soup immediately.
