Microwave French Onion Soup Recipe

A good way to win some compliments from friends and family is to prepare french onion soup using this recipe. Even though french onion soup is an appetizer I enjoy snacking on it any time of the day. Ingredients

 
6 cups thinly sliced onions
 
4 tablespoons butter or margarine
 
4 10 1/2 -ounce cans condensed beef broth
 
1 soup can water
 
2 teaspoons Worcestershire sauce
 
1/2 teaspoon salt
 
1/8 teaspoon pepper
 
2 hard rolls, sliced and toasted
 
Grated Parmesan cheese
 
Sliced mozzarella cheese

Directions

In 3-quart casserole, combine onions and butter.
Cook, covered, at HIGH for 8 to 10 minutes or till onion is tender.
Stir in broth, water, Worcestershire, salt, and pepper.
Cook, covered, at HIGH for 12 to 14 minutes or till boiling.
Reduce setting to MEDIUM (5) and cook, covered, 5 minutes more.
Ladle into heat-proof soup bowls.
Top with toast.
Sprinkle with Parmesan; top with a slice of mozzarella.
Cook, 4 at a time, at HIGH for 1 1/2 to 2 1/2 minutes or till cheese melts.
