French Blueberry Cobbler Recipe
French blueberry cobbler is a fruity cobbler prepared with fresh blueberries. Flavored with orange rind and liquer with cinnamon and a liberal dash of vanilla, the french blueberry cobbler is baked to prepare. Sprinkled with sugar and served, it is best served warm.
Ingredients
Nonstick cooking spray
1 1/2 cups fresh blueberries, stemmed and sorted, or 1 1/2 cups thawed frozen dry pack blueberries
1 tablespoon orange flavored liqueur, such as Cointreau
2 tablespoons plus 2 teaspoons granulated sugar
2/3 cup skim milk
1/3 cup sifted all purpose flour
1 large egg
1 teaspoon grated orange rind
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1 tablespoon confectioners sugar
Directions
Preheat the oven to 350F Coat a 6 cup shallow baking dish with the cooking spray and set aside.
In a medium size bowl, toss the blueberries with the orange flavored liqueur, if desired, and 1 teaspoon of the granulated sugar, and let stand, uncovered, at room temperature for 30 minutes.
In an electric blender or food processor, combine 2 tablespoons of the granulated sugar and the milk, flour, egg, orange rind, vanilla extract, and cinnamon by whirling for 5 seconds or until smooth.
Spoon the blueberries into the baking dish, pour the batter evenly over them, then sprinkle with the remaining 1 teaspoon granulated sugar.
Bake for 1 hour or until puffy and golden.
Sprinkle with the confectioners sugar, if desired, before serving.
