French Artichokes Recipe

4 artichokes
 
1 clove garlic
 
1 tablespoon salad oil
 
1 pint sour cream
 
1-2 tablespoons caviar

Directions

Wash artichokes carefully and soak 30 minutes in salt water.
Cut off stems and bottom tough leaves.
Cut off 1/4 of tops.
Cook artichokes upright, covered, 45 minutes or until tender, in boiling water with salad oil and garlic.
Drain and remove choke from center of artichoke with spoon, scraping gently when cool.
Mix sour cream and caviar, and fill.
