Ingredients

 2 hard-cooked egg yolks
 Milk1 Teaspoon
 3 tablespoons fine bread crumbs
 1/2 cup ground cooked meat, poultry or game
 Egg1 , beaten
 Unbleached flour1 Teaspoon
 Salt1/4 Teaspoon
 Pepper white1/8 Teaspoon

Directions

Mash egg yolks with milk and mix with remaining ingredients.
Flour hands and form small balls the size of a nutmeg.
Drop into gently boiling water or broth and cook until they rise to the surface
